I always have a lot of people ask me, "what the heck do you eat as a vegan?" This is probably the question I get asked the most often. And there really is so much out there. Here are two meals that we had this week that are VERY vegan and yet still feel like you're eating meat (just in case you're afraid you'll be missing meat.) :)

"Quorn" Fajita's
These are quite possibly one of our favorite meals to make. They take me less then 30 minutes to prepare and everyone in my family loves them.
Ingredients:
Quorn Chik'n Tenders - 1 bag
1 red onion
1 green pepper (and other peppers as you'd like)
1 packet of fajita seasoning (or you can make your own, I usually use my homemade taco seasoning.)
And then any fancy fixin's you'd like to add when you eat. We often treat them like tacos and throw all kinds of fresh veggies in the tortilla, like spinach, tomato's, cilantro, green onions, fresh salsa, avocado, really whatever you want to add tastes good with this. These are seriously SOO good!
Tofurky Roast
This is one we are just discovering and we LOVE it! It's perfect for when you are having guests over and need to serve something a little more "mainstream." And it's also really easy to throw together. I had frozen this one and we were heading off to church (yes, we're a church attending people in our home) so I just threw it in the crock pot on low while we were gone with the roast veggies (potato, carrots, onions, and anything else you'd like to use) and then it was all ready for us when we got home. Just warm up the gravy and prepare some fresh veggies as your side and you've got a complete meal! So good and so easy! And you won't believe it's not meat.
So there you have it. A few meals that we do through out the week that are healthy, quick, and easy.
